ASIAN PREHISTORY TODAY

In Salatiga, you’ll meet people from all over the archipelago (remember that the distance from Aceh, in North Sumatra, to Jayapura in Papua is over 5,000 km). Among them are the students who will welcome you to UKSW on the campus, often referred to as “mini Indonesia.”

 

Such a diversity is, of course, reflected in the vast culinary selection offered by the city’s many small restaurants. To allow you to experience this diversity, we have decided to offer a selection of these dishes during the six dinners at the university. This is certainly a somewhat ambitious decision, but we felt this experience would help you discover the richness of Indonesia.

 

Our dinners will be simple, but have been carefully selected by a small group of UKSW faculty members and students who have contacted their favorite suppliers. This also allows our conference to support local micro-businesses during its duration.

SALTED EGG FRIED CHICKEN

Ayam Saus Telur Asin (salted egg yolk chicken) is a flavorful Indonesian-Chinese fusion dish featuring crispy fried boneless chicken pieces coated in a rich, creamy salted egg yolk sauce. The flavor is umami-rich and aromatic, combining the grainy creaminess of salted egg yolk with fragrant fried garlic, creating a savory, buttery coating. The dish will be served with rice and slices of tomato and cucumber and lettuce as condiment. By the early 2000s, the dish gained its momentum in Indonesia following the introduction in Singapore and Malaysia where creative chefs began using salted egg yolks in modern dishes like salted egg prawns and salted egg crabs, blending traditional flavors with contemporary cooking styles. This innovation spread rapidly across the region. Today, Ayam Saus Telur Asin is a beloved fusion dish found in restaurants and home kitchens throughout Indonesia, symbolizing the region’s creative adaptation of Chinese culinary influences.

FRIED CHICKEN WORCESTERSHIRE

Ayam Saos Inggris (Chicken in Worcestershire sauce) is an Indonesian–Chinese fusion dish that emerged during the colonial era in the Dutch East Indies (late 19th to early 20th century). The dish reflects the creative adaptation of Western ingredients and flavors—especially the use of Worcestershire sauce, known locally as saus Inggris (“English sauce”)—by Chinese-Indonesian cooks, spiced with garlic, onions and pepper enriched its flavor. The taste is savory and a little bit sweet.  The dish will be served with rice and stir-fried garlic bokchoy.

MIE AYAM (CHICKEN NOODLES)

Mie Ayam Bandung dish is a bowl of boiled egg noodles that are spingy and smooth in texture. The noodles are boiled until just tender, then tossed in a savory oil mixture made from soy sauce, and garlic. Once the noodles ready, it will be topped with minced or diced chicken which has been sautéed with soy sauce (kecap asin), sweet soy sauce (kecap manis), garlic, and oyster sauce, creating a savory-sweet glaze and boiled choy sum.  A clear chicken bone broth, flavored with scallions and fried garlic, served on the side. Separated chili sambal for spiciness will be served separately. Mie Ayam Bandung dish is  a fusion of Chinese noodle-making techniques with Indonesian flavors and ingredients and was at the beginning popularised in Bandung, West Java.

Chicken Kwetiau

Chicken Kwetiau is a stir-fried flat rice noodle dish mixed with fresh vegetables and chicken slices. Originally influenced by Chinese Hokkien and Teochew cuisine, kwetiau goreng evolved in Indonesia through local adaptations, especially with the use of sweet soy sauce, which gives the dish its signature sweet-salty balance. Today, it’s a popular street food and restaurant favorite, especially in cities like Jakarta, Medan, and Surabaya.

Roast pork is prepared from fresh, high-quality pork seasoned with salt, garlic, and traditional spices, then roasted until the meat becomes tender and flavorful. NASI GORENG

Nasi Goreng Jowo Semarang is a typical traditional Javanese-style fried rice dish from Semarang, Central Java. Nasi goreng jowo is cooked using simple, traditional seasonings such as garlic, shallots, sweet soy sauce, salt and pepper and cooked over a charcoal stove (anglo), which gives it a distinctive smoky, earthy scent. PORK SATAY (CHINESE CUISINE)

Sate Babi Cina (Chinese-style Pork Satay) is a flavorful and aromatic grilled pork skewer dish that reflects the rich culinary fusion of Chinese and Indonesian traditions. The dish will be served with rice and fresh vegetables. Separately,  sweet soy sauce mixed with lemon, sliced chillies and shallots are added to strengthen the taste of the satay. CHICKEN SALAD

GALANTINE

Galantine dish is baked minced chicken roll served with boiled egg and vegetables (long beans, carrots), pickled cucumber and lettuce, and potatoes with sweet and sour tomato sauce. It is a French-influenced Dutch dishes comforting, home style dish. Galantine entered Indonesia as a local cuisine during the Dutch colonial period.
